Red Pepper, Ground (Cayenne)

Made from Capsicum hot peppers, the most pungent of all spices. They can vary in color from orange-red to bright deep red. Cayenne Pepper must be used with restraint, but the right amount will add flavor interest to eggs, sauces, fish and vegetables. It is an ingredient of Curry Powder and some Sausage Seasonings. Cayenne pepper is made from a ground red chilli pepper which originally came from Cayenne in French Guyana.
